Ranch Tofu Nuggets - Very Kid Friendly

1 packet fat-free HVR (Hidden Valley Ranch) ranch seasoning (or other vegan ranch seasoning)
1 cup cornflakes
1/4 cup nutritional yeast
1 lb. of extra firm tofu
Soy milk for dredging
Instructions:
Preheat the oven to 400.
Slice tofu into 8 slices. Press for 10 minutes to get out extra water. Cut each slice into four nuggets and set aside.
Crush cornflakes into fine crumbs. Mix with ranch seasoning and nutritional yeast.
Dredge tofu nuggets once in the coating mix. Dip the nuggets into soy milk and dredge again to recoat.
Spray a cookie sheet lightly with oil. Arrange nuggets in a single layer on the sheet. Spray the nuggets themselves lightly with spray.
Bake for 10-15 minutes or until coating is dry and crispy.
