Spicy Mex-Style Chickpea

Spicy Mex-Style Chickpea
Makes 2 cups

Sprinkle these on a salad of lettuce, diced tomatoes and avocado with a little olive oil and lemon juice for dressing.

2 (15 ounce) cans chickpeas, drained
2 tablespoons vegetable oil
3 teaspoons chili powder (or more)
2 teaspoons paprika
2 teaspoons cornflour
1 teaspoon cumin
1 teaspoon oregano
2/3 teaspoon garlic powder or onion powder
2/3 teaspoon cilantro (ground coriander)
2 dashes cayenne pepper (or to taste)
 
For cheezy flavor
2-4 teaspoons nutritional yeast
salt (to taste)

Preheat oven to 375ºF/190ºC.
 
Mix chickpeas and oil.
In a small bowl mix together corn flour & spices (except salt). Add to chickpeas and toss to coat.
Bake on a baking sheet about 40 min.(or until crunchy).
- Sprinkle with salt.
