Apple Pie

For those that are vegan, you will have to use what you do for butter substitute.

Pie Crust(don't mess with the crust) This is the flakiest crust you can make.

2 cups flour
1 cup vegetable shortening
1/2 cup water

Will be sticky. Refrigerate till cold, flour generously ,and roll.



Apples

6-7 large granny smith apples. Slice thin,use slicer for uniform slices.
Apple juice-2 cups??
Simmer apples and juice ,until apples are almost tender.
Mix 2-3 tbs cornstarch with 1/4 cup water and add to apple mixture
I use very little sugar as we like a tart pie. You should not need any more than 1/2 cup for a sweeter pie


Now your arteries start chugging :rabbit:

Line pie pan with crust, pour thickened apple mixture over one stick butter or butter substitute. Cinnamon Add top crust,prick with fork and bake 350 degrees .
Time depends on altitude and oven.
I take mine out when the apple juice is bubbling out the holes in pie crust and is thick

Bonnie:  Have you ever tried Smart Balance for your vegetable shortening?  And I think half Smart Balance and half coconut oil might also be a good substitute for butter in the pie.  And what about mixing the cinnamon with the apple juice and thickening agent and sugar if you want that?

The coconut oil is calorific BUT it is not as dangerous for the arteries as butter OR margarine is. Since it is easily liquified, I think I might just mix it with the apple juice mixture too, but then the recipe would be mine and not yours.  :ROFL:  I guess I'd better try making this pie my way before messing with yours, huh? :console:  I'll get back to ya on that, okay? ;D   But don't hold your breath! :P

Check out the www.tropicaltraditions.com website for more information on the healthy properties of coconut in contrast to other shortenings or cooking oils.  I was very pleasantly surprised about how much healthier coconut oil is than the other oils we have been told that were so good for us. Bah Humbug! It is the only thing I use to cook with now and I have not gained weight in six month of use. I do use some Smart Balance with the coconut to get the buttery taste I look for though.   :help:

I have never thought of using coconut oil. I will give that a try. I have tried regular margarine and that just didn't do it.
As for mixing all together, shouldn't be any reason not to. Just never have
