Mushroom Brown Gravy
Makes 1 1/2 cups.
Ingredients:
2 tablespoons vegan margarine
4-6 button mushrooms, finely chopped
3 tablespoons flour
1 tablespoon nutritional yeast
1/4 teaspoon ground pepper
1 teaspoon tamari
1 cup vegetable stock
Directions:
In a medium saucepan on medium-high heat, saute the mushrooms in margarine until soft. Add the flour, nutritional yeast, pepper, tamari; stir constantly until thickened. Whisk in stock 1/4 cup at a time, stirring constantly until thickened. Blend in food processor if you want smooth gravy or serve as is.
