Maple-Baked Oatmeal

Maple-Baked Oatmeal
(Adapted from Canadian Living )

Makes 4 servings

Ingredients:

1 1/2 cups old-fashioned rolled oats
1/4 cup sliced almonds, lightly toasted
2 tablespoons maple sugar (or brown sugar)
2 tablespoons pure maple syrup
1/8 teaspoon salt
3 cups soy or rice milk
cinnamon, for dusting

Directions:

Preheat oven to 350 degrees

Lightly coat an 8" square baking dish with nonstick spray - combine rolled oats, almonds, maple sugar, maple syrup and salt in the baking dish. Stir in soy milk.

Place into the oven and bake until the oats have softened and the soy milk has been absorbed, about 40 to 45 minutes. Remove from the oven and dust the top with your best cinnamon, to taste. Let cool slightly before serving.
