Traditional Senoran Potatoes Grande
A wonderful dish of fried potatoes with green chilies and onion.
SERVES 4
4 cups sliced potatoes
8 ounces canned diced green chilies
1/2 cup chopped onion
1/4 cup oil (for frying)
Slice peeled potatoes.
Chop onion.
Heat oil to medium high.
Add potatoes to hot oil and saute about 3 minutes. Add onions and saute about 3 minutes.
Add green chili and cover.
Turn burner to simmer and simmer about 20 minutes, or until done.
