Curried Potatoes and Peas
3/4 pound peeled potatoes, cut into bite-sized pieces
1.5 teaspoons salt
1.5 teaspoons curry powder
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
2 tablespoons olive oil
1 small yellow onion, chopped small
2 garlic cloves, very finely chopped or mashed
1 cup frozen peas
1/2 cup coconut milk
Boil potatoes until soft. Mix salt, curry, cumin, and coriander in a separate bowl. Heat olive oil at medium-high heat in a skillet - cook the onions until translucent, then add the spice mix and garlic to the onions and continue to cook for 2 minutes. Next, add the potatoes and peas, stirring for 5 minutes. Add the coconut milk and stir just until the mixture is evenly coated.
