Adobo Red Beans and Rice
Serves 2 as a meal; 4 as a side
This is an excellent way to use left over brown rice! To make it even more tasty, top each serving with sliced avocado and some Tofutti vegan sour cream.
Ingredients:
1 1/2 cups cooked brown rice
14oz can adobo seasoned fire roasted diced tomatoes
1 cup cooked kidney beans
1/2 tsp sea salt - optional
Directions:
Combine all ingredients together, heat thoroughly and serve with cornbread.
Notes:
If you don’t have access to ‘adobo seasoned fire roasted tomatoes,’ use 14oz can of fire roasted or regular diced tomatoes and add adobo seasoning to taste.
If you use precooked brown rice (the kind that you can zap in the microwave for a minute, then its done plus canned, no-salt added kidney beans, this meal come together in under 5 minutes!!)
