Easy Vegan Meatloaf
Left overs make great sandwiches!
Ingredients:
1 package Gimme Lean Beef Style
3 tbsp Ketchup
2 tbsp Yellow Mustard
1 small onion, minced (really chop those onions!)
1 tsp salt
1 cup whole wheat bread crumbs
1/4 cup soy or rice milk
1 tbsp low sodium soy sauce - optional
1 tbsp dry basil
5 tbsp Ketchup, optional topping
Directions:
Preheat 350 F
1. Place large sheet of foil in bread pan (enough to make a tent)
2. Mix 3/4 cup bread crumbs with other ingredients.
3. Add another 1/4 cup crumbs if you want the meatloaf a bit firmer
4. Place meatloaf in bread pan
5. Optional: Cover top with extra ketchup if desired
6. Bake 1 hour to 1 hour 30 minutes (until outside is browned/firm and inside is not loose)
