Armenian Kidney Bean Salad

Serves: 4
Time to Prepare: 10 minutes
Ingredients:
1 large tomato, seeded and diced
1 large green pepper, seeded and diced
1 medium onion, diced
3 cloves of garlic, minced
¼ of a red bell pepper, minced
2 tsp. of chopped oregano leaves
1 tbsp. of diced parsley leaves
2 (15 oz.) cans of red kidney beans, drained and rinsed
Juice of 1 lemon
1 tbsp. of olive oil
½ cup apple cider vinegar
Instructions:
Seed the tomato and dice it.
Seed the pepper and dice it.
Dice the onion.
Mince the garlic and red bell pepper.
Chop the oregano.
Mince the parsley.
In a large bowl, combine all of the above ingredients.
Allow the salad to marinate for at least an hour, if longer put in the refrigerator.
