Biscuits and White Country Gravy

Biscuits

INGREDIENTS

2 Cup Flour
2 Teaspoons Salt
1 Tablespoon Sugar
1 Tablespoon Baking Powder
2/3 Cup Soymilk
1/3 Cup Vegetable Shortening

PREHEAT oven to 425
In a bowl, sift: Flour, Salt, Baking Powder and Sugar
Add in Soymilk and Vegetable Shortening. Mix and knead.
Keep Kneading until the dough in manageable.
Turn bowl onto a floured surface.
TIP: I like to use plastic wrap on my surface. Before rolling the dough, I place another sheet of plastic wrap on the top and roll. The dough won't stick to your rolling pin.
Roll the dough out 1/2" thick.
With a biscuit cutter, cut about 8 circles.
Place on a baking sheet or baking stone.
Bake 8-10 minutes.
Remove from the oven and top with your favorate spread or gravy.

WHITE COUNTRY GRAVY INGREDIENTS

1/2 c Vegetable Oil
3/4 c Flour
1 3/4 t Salt
2 t Black Pepper
4 c UNsweetened soy milk

DIRECTIONS

Heat Oil in a large skillet over MED-HI heat.
Shortly after, whisk-in Flour, Salt and Pepper.
Cook and stir over MED-HI heat until completely mixed.
Gradually whisk in soymilk, and bring heat to HIGH heat.
It will seem too liquid, but keep stirring and it will become thick after a few minutes.
Once it's thick, remove it from heat and keep stirring until it's creamy.
If gravy is too thick, DO NOT add water. You can slowly add more soy milk.
