Fruit Soup

Altho the receipe I use is Norwegian,most cultures have a form of fruit soup.
It is great for breakfast. Serve with cream or cream substitute



Norwegian Fruit Soup

4 1/2 cups mixture of dried fruit (raisins, prunes, apricots, apples, etc)
1 can sour cherries
3 cups water
1 cup sugar
1/2 cup quick-cookng tapioca
1 stick cinnamon
1/2 tsp. salt
2 cups grape juice
1 lemon
Combine all ingredients except grape juice and lemon juice. Bring to a slow boil. Turn down heat, cover and simmer until tapioca is clear. Stir frequently to keep tapioca from sticking to bottom of pan.

Add grape juice and lemon juice and again bring to a boil. Serve hot or cold.
