Fresh Basil Salad Dressing

Fresh Basil Salad Dressing

INGREDIENTS:

1 (10 ounce) package soft silken tofu
1/3 cup olive oil
1/4 cup chopped fresh basil*
1/2 teaspoon rice vinegar
1/4 teaspoon salt
3 teaspoons tamari

DIRECTIONS:

1. Blend the tofu and while the blender is running slowly pour in the olive oil until a thick mayonnaise like consistency is reached.
2. Add the herbs, vinegar, salt and soy sauce; mix well and refrigerate.

*You can chop up fresh basil from the garden and freeze it for winter use for this recipe. Do not used dried basil, it just will not work well for this.
