I was telling a lady I met about the Dandelion Jelly and she gave me this recipe. Might not be real healthy but may be a good use for all that zucchini that your neighbors leave at your door or you leave at theirs.
6 cups peeled, grated fine zucchini
Add 6 cups sugar
1 - 8 oz can crushed pineapple
1/3 cup lemon juice
Boil 6 minutes
Add 1 large box Jello any flavor - (she liked strawberry or orange)
Stir till dissolved
Put in steralized hot jars and seal with hot lids.
Can process in hot water bath for 5-8 minutes.
